I like your truck with the grey/oak setup.....you should keep it! It's unique for sure. Love that build. Thinking of grey for my truck....
Pretty easy process. We started by giving the parts a really good cleaning with Simple Green. Wiped them with prep solvent and then followed the instructions exactly on the SEM XXX adhesion promoter....followed by SEM Presidio grey. Color match is not identical to the OEM blue/grey but it would be OK if you were doing your whole interior so it all matches. There is a color called Thomas Bus Gray...it looks to have a bit more blue in it and it's darker. Might play around with a can of that when we do the Troopy dash stuff. There are a lot fo shades of grey in the trucks....it's kind of surprising. I've been buying a lot of new dash parts and I have to do a double take every so often to make sure I got the right part....the shades are really different.
It looks REALLY light in this pic(my dyed one is on the right)....the one on the left is a brand new OEM. Guess I'll lose a few points in the next concours. Oh well.

This is what my interior guys use....they recommend the adhesion promoter. We use the tan on the stuff for the 80...matches perfect. Sprays out super nice. Great product. If you're ordering SEM stuff, buy a can of the SEM Trim Black......might be one of the best paints in the world.
