If going to Asheville hit up wicked weed, Asheville and Green Man. If venturing outside of Asheville hit up sierra nevada and oskar blues.
Sierra Nevada is my favorite brewery in terms of looks and food/beer overall in NC. Set up like a major west coast craft brewery in that you get an awesome looking brewery with world class food and great beer.

Had this yesterday.... missed out on their Ancient one version of this, by two people but grabbed the last one of these at the bottle shop. (basically the same thing but aged in 35 year old Heavnly Hill Barrels vs the 15 year old this one was)
I had heard they make a great bourbon aged beer but wasn't really ready for how good. Easily at solid #2 for my list. Next year i'll be there before dawn to make sure I get an ancient one.

I had the chance to go to GABF this weekend and thought I would pass along top 10 highlights to my friends here!
1. Place is crazy - so many people, kind of detracts from the overall experience...actually who cares...there were 3,800 beers there!
2. Green chili beer seems in vogue. I'm not convinced.
3. Sour beers were everywhere. I'm convinced. I use to hate them but now fully appreciate. Watch out green chili beer (see above, but this excludes ghost face killa).
4. I have lived vicariously though Al @lt1fire with all the NC beers I missed out on. Satisfied my NC fix all apart from Ass Clown...they were tapped out.
5. PBR's booth was awesome. Jonny @GLTHFJ60 thought of you!
6. I have a new appreciation for pretzel necklaces. No jokes please.
7. Uberbrew in Billings MT is going to do big things. Watch this space.
8. 1 oz. drinks have a way of catching up with you.
9. There was no Spruce Goose at Steamworks brewery booth...I was sad for all of us.
10. If you want to come out next year, I'll host!

Well i'll be out next year so we can do it all again.
Placing bets on how many 1oz pours I can get to before I black out
@shellb I never thought you would become a sour or gose fan..... after those 12 tasters we had at Epic and Crooked Stave a few years back and your reaction to it.... Priceless.
I'll admit I am trying to like them more but I never think that i'll ever order one over a good porter/stout or a pale variety. I may have one as my 7th or 8th beer though.
Sucks that Ass Clown was out.... they are still my favorite in NC but just don't put out the volume to be as well known as Wicked Weed.
Also sucks on the Spruce Goose... I need to get some more of that...... anything that follows a viking recipe is OK with me.

Finally got my hands on the "white whale." This took forever to track down.
Excellent beer, though some have said they really don't like it. I wanted to do a write-up on this one, I haven't really done that for other beers here. I feel like this one is warranted. It's a lot like a really strong Belgian ale, mixed with a well-hopped IPA. The stuff needs to be served COLD and sipped slowly. It had so much sweetness that I felt the cold was the only thing that help cut the sweetness. Tasted "peachy." It had one of the best flavor ranges I've tasted in a beer.
There's a lot of alcohol in this beer. They sell them in packs of 4 for a reason. I haven't had Sam Adam's Utopias, but this sucker was strong.
Good stuff. If you can get your hands on one, I highly recommend it.

Manged to snag one back in June and four earlier this month.
I've had one.... and have 3 in the beer cellar to age with one reserved for a visitor sometime this year.
Utopias and this aren't really comparable with taste.... in fact Utopias is pretty much a stand alone beer.... not many things taste like it at all and they really vary in the ingredients year to year. But if you want some the local beer store has a 2008 bottle for $400
at 18% I do believe that this is the highest ABV IPA i've ever had... I think the 120 I had a few years back was 17.4%
I have my feelers out there to score a bottle of Sink the Bismark.... highest IPA ABV at 41%. My cousin had one for me but dropped the damn thing and broke it.... Doh!!!!
I agree with your assessment. This one does need to be cold due to the unique flavor it puts off. Very well balanced beer.
Oh and even though it can't be sold in NC you guys still can actually get it. My friend found a website that will ship bottles to your residence in NC.
