Came back with a fresh clutch, rebuilt T-case, disc brake conversion and they addressed a few concerns found along the way.
A big thank you to @orangefj45 and the crew at Valley Hybrids, they're very friendly and helpful. I still have a few things to do to get it running in good condition and they gave me a few good referrals.

Thank you so much for bringing your cruiser to us for these upgrades and repairs.

You have my number, don’t hesitate to reach out if you have any questions or need other parts. Happy to help!

Weber is not the answer.
Rebuild/desmog your oe or find an oe non usa carb for it.

I need to have the carb gone through, if anyone knows a good carburetor guy, please let me know.
Either have mine rebuilt and gone through or swap over to a Weber? That got me thinking if I should remove all the smog equipment?
There are a couple famous Carb Pros, Jim C. and Mark A., Mark A. is mentioned above and is closer to you. A pro can also give you a ported vacuum source if you don't already have one. But, if you're going to run a carb, you should familiarize yourself with it enough to pull the airhorn off and clear the needle valve in the field.
You have a great carb, last of the manual secondary. Same as came on my Pig, took me a while to realize how lucky I am to have it. I learned to rebuild it before internet with just the piece of paper that came in the rebuild kit. These days, with the Pinhead (no relation) videos and 'Mud, a carb rebuild is a lot easier. Kurt has the kits, give it a try.
You should de-smog it. A naked F engine is a thing of beauty. Strip off all that ugly baloney and it's so much easier to reach things to work on

Missing the rear jump seats but the seat belts are still there. One thing I've noticed after driving it a little, the floor in the back gets hot from the exhaust piping. I don't think the dog will like that. I was told that "Lizard Skin" insulation would be a fix but I don't know how I feel about spraying that back there.

very nice find, my 74 looked like a rotted carcass compared to yours!

Thanks for the recommendations. I found Pinheads videos and I'll take a look at those. Definitely interested in keeping the factory carb and have been diving into videos on how they work and how to work with them. I see Marks out of the office until next week, I'll call him then. I would like to de-smog it after looking at all the hoses and fittings left in place and since it is not needed, I see many potential failure points with every additional component. Keep it simple.

You mentioned pulling the airhorn off to clear the needle valve in the field, would that be what pinhead does here in the first 2:40 of his Part1 video?

Yes. Then inspect and clean the pointy end of the needle valve and it's seat. Assembly just reverse but eyeball the float level and don't tilt the airhorn so that the float pivot pin falls out.
