Smoked some wings and meatballs for Christmas dinner. Turned out really tasty.
 
Out daughter brought over what was supposed to be our Christmas dinner. Cornish game hens, sauteed asparagus, sauteed baby carrots, candied yams (not pictured), and a bunch of cookies and desserts. all very tasty stuff.

Been loving the way smoked chicken comes out. Like rotisserie but way more flavorful.

Yesterday was roast beef with Yorkshire puddings. Today it’s 2 racks of ribs in the smoker. Having family here to visit is an easy 5-8lb bump on the old bathroom scale.
 
Today - I was being lazy - thinking - drink some beer, don't go outside - cook my brisket and pork belly in the stove, etc.

But . . after watching the Chiefs play in the snow and after asking, "what would @JohnVee and @jfz80 do" and then channeling my inner Yeti (@lt1fire), I got my fat butt outside and smoked some stuff.

Costco had Pork Belly on sale for cheap, so bought some and rubbed it and quasi-cured it for a few days in my pork rub.

Also got some on-sale, small brisket pieces from Weaver St Market. Rubbed it down and let it sit in the fridge for about a week.

The Primo was nasty as usual, so had to thoroughly clean it :(

I did get a new thermometer to help plug up the hole on top.

Roasted pablano bacon man n cheese.
Comfortable. :)

Dried apricots, onion, ginger, garlic, bell pepper, turmeric, cinnamon, chicken stock, chicken thighs. Easy and delicious. Easily adaptable to go either Mediterranean or Indian. The chicken is hard to see because I made a double batch of the apricot sauce for the old man. Mmmmh, sauce.
