Second time trying to smoke a pork shoulder and this time it turned out perfect. (first one sucked big time) Couldn't believe how good this was. 8lb butt, smoked for 9 hrs, then wrapped and cooked for another 6 hours. Just fell apart like butter. I think I'm hooked. Next time.... brisket!

I have a Bradley smoker, and I used a mix of apple and cherry wood. I've been so jealous looking at all the good smoked meat that all of you guys do, and I thought I have to be able to do more than just smoked salmon and cheese. This time it worked for me and I cant wait to try again. A big thanks to you guys for the inspiration!!
 
My dad decided to donate his Cabela tall, gas powered smoker to me.
I'll have to test it soon. It can hold a lot of meet. He used to smoke sausages, bacon and pastrami.

I've been taking my butts to 205* internal and it has really upped my game.
 
Here we go again. Put another butt in at 4:00 this morning, no pictures yet but I'll get some later on. Smoking at 250* until it gets to 205 internal. Seems to be the magic numbers. Hopefully this one is as good as the last!!
 
Well this one took 17 hours at 250* to get to 205 internal temp. It stalled at 180* or so for a really long time, but when I did pull it apart it was just like butter. Good thing I cooked this yesterday and not today otherwise dinner wouldnt be ready until 10pm or later. Having a few friends over tonight and I think this is going to be a hit!!
 
Nice! I cook pork butts hot, but might have to try a little lower temp. I'm not a huge pork fan, but yours looks great.
 
Never tried smoking ribs... As an insurance, I threw a butt on since I know I can get that right. Anyone see anything grossly out of whack? Been on for about 45 minutes, so I have some time...

Looks good to me.

I cook ribs 2-4 hours depending upon temp and when they decide to finish. You can try poking the meat with a toothpick or bending them around the time the meat really starts shrinking on the bone.
 
Yeah, they turned out pretty good. I sent a PM to @BBQ BOY and he gave me some good pointers. Pork Butt tastes good, but it was hard to pull apart... Never dealt with that except when I've undercooked it. This had an internal temp of 203*. Weird...

A little late, but at 30 minutes, I start sprit zing the ribs and repeat every 15 minutes until 2 hours, then wrap in foil with butter and apple juice and cook for another 1 to 1.5 hours ....

The ribs really did come out better than I'd expected! My wife loved them. I hadn't thought to use butter on my meat, but Michael told me the same thing. After 3 hours, I pulled them, covered them in butter, honey, and brown sugar, wrapped them in foil, and threw them back on the smoker for another hour.

The pulled pork was not my best, but even a bad pulled pork tastes amazing with the @elkaholic vinegar sauce!
