With a sharp paring knife, if you cut it at an angle below earth level, you can take all you want.
I'll keep that in mind next time I'm out. I've been cutting it with a sharp knife a few inches above the ground, hopefully I'm not killing it off for next year.

Asparagus is a perennial, it will grow back. I think you have to dig up the ball or something or from seeds. A friend had a bed of it. It was sprouting shoots all the time. I seem to recall keeping it separate from the vegetable garden. I recall it can effect the taste of the other veggies.

Luckily for me, nobody really walks some of these areas anymore.

I’ve never noticed it becoming green, but my 5 year old yelled a few mornings ago “my pee smells like vegetables!!!!”

Here is some useless knowledge for you. I remember when I was young studying this. Asparagus (aside from being yummy and great with grilled steaks & chicken) is the only veggie that contains a sulfur-containing compound called asparagusic acid. When your body breaks it down and you pee it out in your urine and the sulfur compounds quickly evaporate and you smell it. One interesting thing I remember from back then was that 1 genetic group either did not produce the smell, or were unable to smell it, and that was those from Viking bloodlines, if I'm remembering correctly. But that was a LONG time ago, and I've lost a lot of brain cells since then, some self induced and others by age. LOL

EDIT. Speaking of Vikings, one of The BEST movies I've ever seen is "The 13th Warrior" with Antonio Banderas, Omar Sharif, and a bunch of other names I can't remember. So good that back when it was in theaters a friend from work and I drove 1 hour (2 hours round trip) to see it, and we liked it so much that on our next day off we made the trip again to see it a 2nd time. If you haven't seen it, you should. When my wife and I found out we were expecting a boy with our first pregnancy many years ago, I even mentioned naming him "Bolvi" after the Viking leader, but she quickly declined. So then I suggested Maximus from the movie Gladiator. She said "no way".

FWIW, my great-grandfather emigrated from Hjørring in far northern Denmark, and I am tall, very-fair skinned, blue eyes, etc., and asparagus still makes my pee smell funny, and I cam definitely smell it!
