I Wanted to give an update:
I received my order from Partsouq on Tuesday. I got exactly what I ordered, and it was packaged extremely well. I will definitely use them again.
The AC Control unit I received is the 4-zone I hoped it would be and looks exaclty the same as F41, pictured above. It takes a single F10 plug, which I will need to order (ac control plug is F46 coming out of the Nav unit). I also discovered I do need a clock and the flasher button assembly. I was hoping to use the ones from my existing Nav unit, but they are quite integrated, so I am not going to attempt it. I ordered those and they should be here Tuesday.
Another Note: the double din face plate is actually 4"x8" (roughly) rather than the standard 4"x7". I am trying to decide if I want to add a custom filler piece or do something more elaborate like an Alpine Halo9 or custom ipad mount. The Halo would fit as a single DIN and the large screen would basically cover the opening. If I decide to go all out and install a Soundman ipad mount, I will install it into the faceplate I purchased. The biggest negative for the ipad is the need to launch the reverse camera app (rev image will not automatically display).

At this point (after tearing out my Nav unit twice and spending many hours with the wiring diagrams), I don't see any reason why this wont work. I hope to know for sure in the next week or two. The audio install I am planning is quite elaborate, so the first phase will be to simply hook up the climate controls and make sure all of that works as intended. From there I can work through the finer details of backup camera, steering wheel controls, etc. At this point, I don't have immediate plans to keep the rear TV, but I think that can be done (in phase III).
Also wanted to say thank you to
@TXSunDevil for his help and patience, answering my questions and getting me up to speed. He provided a number of helpful documents and advice. The pinning directions he posted, look to be complete for models up through 7/2009. A word of warning though, the 7/2009-3/2012 have differences in the pin numbers and 13+ are different still.
