Nuther brisket. This one had a layer of fat right down the middle that didn't fully render. Kept it moist, but also had to do some trimming to eat. End missing because I had to check for poison.

@TailsWCU is trying to decide what kind of Smoker to buy. I recommended a BGE, but I'm not sure which way he is leaning. I have had nothing but positive experiences with mine, has anyone had a negative experience with theirs?
 
The only issue I have had with mine was a bad batch of charcoal that had some pine in it somehow. It took several cooks to get rid of the turpenes from the pine. It was unfortunate as I had had excellent results with this non-BGE charcoal, but the company move manufacturing offshore and I am guessing they lost some quality control.
 
I'd had luck with Cowboy Brand... But I found a place in town that has BGE for just over $20/bag, so I went back to BGE charcoal

Think I've been using big bag of Cowboy from Costco with hickory & lump. It's cheap and haven't had bad results with it. B&b is much higher quality, but it's hard to pack a basket with it because the chucks are so big (tree limbs). I tried one bag of royal oak and didn't like it for a couple reasons.
 
The brand I had issues with was Wicked Good Charcoal ....
 
Is mesquite lump harsh at all? If it's good to cook a long time with, I might buy a couple barrels and make some lump with the endless supply of mesquite I have.

Bringing you my barbecue would be like taking one of my finger paintings to Picasso... He'd think it was cute, but in the end, he'd be unimpressed. Besides, I'm bringing you Grapefruit Sculpin per your request.

On a side note, I wish I could get my brisket to turn out like @Trunk Monkey 's...
 
TXLX100, curious what you didn't like about Royal Oak? I've been using it and haven't had any complaints other than the ratio of big to small pieces being inconsistent.

The couple bags I bought from Walmart, there were some rocks in the bag. And I didn't think it burned as clean as some other lump charcoals. I know a lot of people like it.... Maybe I got some wet bags or something. The cowboy stuff I've been buying from Costco has been really crappy the last couple times. It's mostly all very small pieces. Like they took all the good wood and stuck it in a better brand bag. I can make it work, but it seems like crappy stuff.

B&B has been the most consistent I've found as far as having a good mix of large pieces of wood. But its kind of expensive compared to other brands.
 
I use, especially for anything low and slow, KK Coco Char. After mildly heat soaking my KK...several "logs"of it will roll 18-hours if needbe at 200°-250° without me needing to restoke the KK (says as much about the KK as it does the CC ;)).

For cold/low temp smoking (125° or less) I sit the hollow "log" over a steel rod/platform I made once the bottom of the log has been lit...and it will slow smolder perfectly.

The KK Coco Char is neutral smoke...just add whatever smoking wood chips/chunks you prefer...

Looks like some good charcoal. I might try a bag and see how it burns in my drum. Where can you buy the coco charcoal at?

Once you know you like it it makes better fiscal sense to buy larger quanity of it from Dennis directly...with a pallet being the best overall deal; nice if a few can go in on a pallet...

And just like all charcoal/lump is not created equal...neither is the coconut shell charcoal.

^ once I get my life squared away and back into a house I plan to get either a 1/2 or full pallet...but its going to be a while though.

I must have been out of my mind when I posted that. I don't need another project right now. I'll keep an eye out for a couple barrels of different size and see if I can make it happen by fall.
