No doubt, you can have more plate there, but I have personally never damaged a cat with the sliders installed. Ken's plate is good, however you do loose some clearance with it. Another thing to remember is that the exhaust is rubber moutned and has some give.
Our bracket sits slightly below the cats and if you had to drop on them, you will hit the bracket first.
