Lunch yesterday was fresh caught yellowtail snapper.

What do you do when you’re off by noon the day before Thanksgiving? You fire up the smoker for some TX style brisket.

Not that I really needed brisket, but the neighbors judge the drinking less when the smoker is going.

That first picture makes it look massive, or you have a tiny kitchen.

I know right...I’ve trained my wife well with the camera, lol.

That cutting board is 30”x18” so it a big brisket..it’s a packer vs a flat so not HUGE. Trimming it takes off a lot.

Burnt pork belly bits next
 
Bone-in ribeye. Close to 3" and 3 lbs. Done over charcoal on a rusted out grill in camp up in PA last night. Mmmmh. The original plan was to go out for dinner after the trails on Saturday but the governor closed all restaurants to on site dining starting on Saturday morning. Strangely, many of them that I saw weren't even doing takeout. Then today I saw plenty of places waving their finger at govco by being fully open and PACKED.

After tomorrows dr visit, I may have to make another batch of carnivore cassrole. I've consumed enough Dawn dish soap to clear out the arteries in 3 years.

Well, we have plenty of pro eaters and lots of good cooks here so show it off, whats in the oven or on the grill tonight?

A meatier take on tater tot casserole.
Ingredients:
2lbs of thick cut bacon, basted with maple syrup while cooking in the pan . Chopped
1.5 lbs of butcher shop ground beef. our place uses all their scraps from their good cuts. Filet, sirloin, NY strip, ribeye, etc, with a Lil chuck. Cooked in the pan right after the bacon grease was poured out, leaving the goodness in the skillet.
1 garlic beef sausage chopped
1.smoked beef sausage chopped
24 Oz sour cream
1/2 can cream of chicken soup.
32 Oz bag of tater tots
1 bag kraft philly cream cheddar cheese triple cheddar cheese.

Cook all the meat, chop up
Put on nitrile gloves.
Put tots in large bowl
Add sour cream, soup, and cheese to bowl. Mix with hands.
Add meat and continue to mix

Spread in 9x13 inch pan. we had enough to make a 2nd smaller pan.

Preheat oven to 350, and cook about an hour, until it's all bubbly goodness.

Small one is dinner tonight, and the other will be frozen for Christmas day
