I made this a few weeks ago and was awesome! You need a remote thermometer to get it right.

Spatchcock chicken

Cut out backbone and push down on cookie sheet until pop.
Put chopped rosemary and thyme under skin.
Brush skin with olive oil and sprinkle with Tony's, garlic powder, Monterey steak seasoning.
Place breast side up
Direct 350-375 for about 1 hr with apple wood
Done when breast 165 degrees

Pork butt took 15hrs.
Came out delicious
