I used to get up every couple of hours and check on it. My temp probe has a second port that I use to measure temperature at the grate...it records min and max temps during the cook. One time I got up after missing a couple of the two hour checks and the temperature range was like 160 - 300. With an ideal temp close to 225, that sucked. Now I cheat and use this little gem:

It too has a grate temp probe. You set the desired temp, and it uses fuzzy logic to completely control air flow. It's scary how accurate it is.
 
I got some shirts and socks and all the in laws for the afternoon...

Socks were smart wool so that's a win
