Ok, I pulled the trigger on the kick ash basket last week. Nice product.

Should make startup even easier.

Take the basket off in the woods. Shake it to get the ashes out.

Add a little new.

Light and go.

Sorry no pics....but starting on Thursday was a 10lb ham, Friday night hamburgers, Fri night 12lb prime brisket went on Sat am took it off, and then a pork loin.....any finally a bunch of veggies. Feed about 26 family members Sat... We celebrated Arden's 1st bday a week early.

I wondered what you were talking about for a few mins after you asked that...

It was a USDA choice cut from costco. I think it was ~$5.90ish a pound.
I have seen full packers at Walmart for 3.90ish a pound but I hate walmart meat.
 
I've been having dreams of carnitas ever since @TrickyT 'made some for our Last Supper in Jarbidge.

I cooked a 6lb pork butt in the Crock Pot (I know, that sounds blasphemous, but you need that precious juice) with a rub, onions, garlic, jalapeños and oranges. It took about ten hours or so.

Once cooked, pull and shred. I poured some of the juice over it, making sure to include a little grease, bagged it and let it mingle overnight in the fridge. Today, it was a solid block of solidified pork juice and meat.

Here's where the magic happens... pinch off the desired amount of meat and cook it in your favorite steel or cast iron pan. The fat melts down and leaves a most delicious crust on all the little bits and pieces.

What you choose to do with the meat after this is your own business. The options are limitless. I stuck mine in a corn tortilla with avocados, al dente cooked onions & peppers, cilantro, and a dash of green sauces.
