I came across a link on a website that I regularly subscribes to about various things and this happens to be a 1995 FJ 80 fully modified/restored (I understand this is LC 100 forum so I won't go into detail)

Just wanted to get some thoughts on restoration of a 2005 LC 100, I know this is not the model that's most thought after but purchased it as a floor model back in 2006 as first owner and would like to keep it as long and as original as I can. Has anyone done a full restoration of a 100 series or have come across any? Not necessarily all at once but slowly over time is what I'm thinking.
That link for the FJ 80 does have a 6.2 L Corvette LS3 engine under the hood, obviously meant for the car but I'm sure it's got some juice. I was thinking at some point the 100 series engine may need to get replaced so that makes me wonder. Has anyone replaced the engine here? The car has about 170K original miles on it now and I started to hear a little rattle here and there but those little nuisances are the little issues I started to address and probably eventually the headliner and front two leather seats and so on...

One of the members here pointed me to you and I'm hoping you can provide some pointers out of your busy schedule. I have a 2005 100 I bought as floor model in 2006, I'm the original owner and now it has about 173K miles. Been a daily driver and was in storage for couple of years while I was on assignment overseas. Car was purchased in CA and I've relocated to FL about four years ago, unfortunately not a lot of Cruiser shops here, but lots of Jeeps though. Hard to find a trustworthy shop to take care of the car, been to couple of dealers but I always doubt their work if they are not trying to rip you off.
Just had the front axle replaced and new tires, the rig runs great other than showing a bit age with some rattles on the back and door panels. The rear AC backlight is out and glove compartment is not aligned. The big ticket item is it has been throwing me the P430 code (bank 2) for couple of years now and I have been able to clear it and give it a good additive and will stay off a few months at a time until recently it will re-light up the same day. Is there any suggestion other than getting an OEM factory CAT replaced which costs $$$? Car continues to drive fine without any issues. But I was told eventually it may clog up and damage the engine so I need to address the CEL soon.
I will eventually replace the front two leather seats once the leather start to crack and that leads me to a restoration at some point. As far as engine-related issues, based on your experience, have you done any replacements (do they need at some point?) or a engine mechanical restoration would give it a second life? I get offers on the streets wanting to buy my rig (including dealerships) few times a year since the car is in decent shape and I would like to eventually restore to it's full glory. I heard you're the guy. Unfortunately I'm in Florida and your in Colorado.

Thanks for your quick diagnostic! I should qualify with more accurate time line. The CEL first started appearing actually I would say +/- 7 years ago, not immediately after coming out of storage. But when it first appeared, I believe it the shop I took it to determined it was caused by O2 sensors, so they were replaced, I forgot up or down stream, then it went away for a year maybe, then started appearing again on and off at random times. The vehicle was stored in a professional covered garage from 2014-2016, driven a short distance once a month to "exercise" the car during the storage.
I'm planning to take my car to a local shop in Orlando area, conveniently named "The Muffler Man," specializing in those codes and exhaust work, hopefully he can find the root cause of the issue rather than replacing the CAT.
I don't remember when was the last time spark plugs were replaced, maybe 30-40K miles ago? I haven't had a tune-up for a while other than routine oil change. Recently replaced a new K & N cone air filter.
Since the axle was replaced by the dealership (I was really upset when I found out I was sold their OEM value line rather then the true factory axle by the way-but the cost was justified given they supposedly said it had lifetime warranty?), I recently discovered some grease around the boot, so I'm taking it back for them to check their own work, plus it is time for oil change.
I'm hesitant if I should ask them about tune-up or clean the MAF sensor since that may give them opportunity to upsell me something I don't need. They also wanted to sell me factory OEM CATs (2) for almost $4K last time when the car was there for service. So they obviously are not interested in getting to source of the problem.
