Everybody has different needs but it seems to me there is a bit of an incongruity between needing 3-4 person seating when you have only two person sleeping.
I fabbed my own second row platform based on the concept from GG. Made it from 12mm (1/2") baltic birch plywood and coated it with Upol raptor liner. All in with a 4x5 plywood sheet, raptor liner, hardware for under $200. I asked Jason at @TRAIL TAILOR to come up with a set of brackets to bolt the platform to the seat mounts. Worked out great. Holds my 63qt fridge, goal zero and some other stuff.

Hey Joe-Welp, after this weekend's trip to Big Bend I've decided to delete the 2nd row and built a platform in its place. I just ran across this thread. I don't see the TT seat delete brackets on the website. Since you've already gone down this road, do you have any tips/thoughts that you can share before I get started?

This fall I'm going to start the process of converting my single person live in cruiser to a double person live in cruiser.
My plan is to remove both 2nd row seat and make a platform of the entire rear area with storage under the platform where the 2nd row used to exist. If I can fit a fridge in that area then I know I can work out the rest.

that would be my choice, but those horizonatal jobs are pricey.Access to a fridge where the second row is would be challenging if you had a sleeper above the fridge setup, unless you could fold your sleeper and pad to gain access. I use a thick foam mattress so folding the platform out of the way is a chore.
The way the middle row floor drops off and how the door is angled it would be hard to get it to slide out for access from the door area.
I think access from the rear hatch with a slider does seem to be the best option if you want a compact fridge under a sleeper platform
