Salsa is all "to taste" and it's easier to add flavor than undo it. Know thy tastebuds.
Roma tomatoes (quartered)-10 tomatoes fill my processor so I start with 8
Red onion- 1/4 or less to start
Garlic - 1 clove
Jalapeño- 1 or less to start (seeds out)
Fresh lemon juice- 1/2 lemon
Salt
Pepper
Cilantro - 1 bunch (about 2 handfuls, no stems)
Tortilla chips for taste testing
Cut/slice/dice everything into smaller pieces. Slightly blend tomatoes and lemon. Add onion, blend a little. Garlic, blend. Jalapeño, blend. Taste. Add a little salt and pepper. Taste. Figure out what flavor(s) you want more of and add. To tone down, add tomatoes. Cilantro is last. Blend and check flavor. Adjust or rejoice.
