This one turned out great. Course salt and pepper 225* for most of the day.

Tri Tip smoked at 225* until internal temp of 130* then seared at 500*

Thick pork chops smoked at 225 for 2 hours then 500* for 5mins a side.

Tried something different as Costco was out of brisket. Sirloin cap sliced thick seasoned with salt, pepper and garlic powder smoked at 225* for 1.5hrs, removed and then finished at 500* for a quick sear. Turned out awesome

Great food weekend. Friday night shrimp crunch and steak frites at Lou’s. Saturday night Spaghetti. Tonight ribs. Finally hit the perfect done-ness but ran out of wood for the smoker so only had wood smoke on them for about an hour and a half so didn’t get a nice smoke ring.

Had a few shrimp, crawfish and sausage left over from dinner so this morning turned it into an omelette. Don’t know what’s wrong with the rest of the people in the house as they wouldn’t even try it but it was awesome. One day they will realize they have been missing out.
