I would highly recommend a 1 ton HF stand. The 4 wheels makes it a bitch to transfer to/from cherry picker, but not too scary. It was very stable, although any stand will wiggle a bit. I was comfortable working with it. Expect to pay about $130 from HF.
For bolts, you want:
3 ea: M12 x 1.25mm x 90mm
1 ea: M12 x 1.25mm x 120mm
1 ea: M12 x 1.25mm Nut, hex plain
10 ea: 12mm flat washers, thin rim (24mm OD)

That's what I bought from AAA Metric in Denver. Shipped, for much cheaper than I could have driven there.
Look in my sig thread and you'll see a real good positioning for the engine stand arms. It worked for me. Beware, it will get off center as you tear it down! Make sure you got a good handle on it! It's a heavy damn piece of iron!
I had a 750# stand and I thought about it for a second. Nah, not worth the risk. Maybe to store the engine and not move it at all? Maybe.
