75 thru 78 will fit with a little work on the bottom outside corners. The 79 thru 83 are round while the 75 thru 78 are square. If you find a good clean set of 75 thru 78 for a good price might be worth your while to trim the corners to fit.

can you get the ambulance doors to fit a '74 w\ a little work or are they just totally different in size\shape?

Any ambulance door will work on any FJ40 if you have the header bar for ambulance doors and are willing to drill a few holes. I happen to have a decent set of amby doors for sale!
