Wow, I was telling Jeri that we should try it. Bacon grease doesn't mix with the turkey flavor?
 
Just didn’t hit the spot. In addition to the bacon wrap the recipe called for quartered onion in the cavity, rubbing the inside and outside with a herbed butter (sage and thyme). Bit on the greasy side but not a lot of the bacon or other flavors came through. Might be operator error. Find a recipe that works for you and try it. Pretty simple to do. Left weaving the “bacon blanket” to Tony. Jeri could do it with her eyes closed. Took a couple of pounds of thick cut bacon.
 
I use a sweet tea and citrus brine; usually for 6 hours or so. It then either goes on the egg or in the oven on convection roast. Choice was oven this year. Always incredibly moist.
