Yesterday's lunch fare...

There's a guy that has a small ceviche and fresh oysters & clams booth at the Monterey Peninsula College Farmer's Market every Friday. Its become my 'must have' every Friday :)

For me I always prefer slurping the bivalves raw...the clams are like a candy dessert(!); but :princess: likes them BBQ'd so every once in a while I oblige her :D

I BBQ them a myriad of ways but this time did a pseudo Rockefeller version using chopped spinach, prosciutto and a splash of Pernod and then topped with grated parmesan cheese.

With a little chopped smoked habanero the BBQ'd oysters and clams were tolerable :D

We've also done this by stopping at Hog Island Oyster Co in Marshall on our way to a oyster feed frenzy camp-out on the north coast of California...so its something we actually do when camping too.


Looks great although I have never eaten a cooked oyster by choice.
Sadly, though, one of the biggest mistakes of my life was to read about the health hazards of eating (Gulf) oysters raw. It ruined it for me. And l love the stuff. I used to gobble them down by the dozens whenever I was in Nawlins. Wish I had remained clueless... :frown:
 
^ dang that looks good! I, typically avoid the country style ribs, but you've moved them to the top of my grocery list John :D

Egg. Loving it when I've been home to use it and usually cook all manner of things to "test". Now...what to do with the 1/2-pallet of Kingsford in the basement from the 4th and Labor Day sales???? That's a lifetime supply for the Smokey Jr!

Country style ribs are often sliced pork shoulder. Because of the size lots of sources say to cook them fast. That's never worked for me but they'll take 1.5-3hrs at 300* depending on size. Keeping them squished together has been the key for me. Good luck.

Santa Cruz chile powder (I'm on a roll :D) dusted tri-tip slow smoked over red oak 'filets'...200 degrees + 2 hours to 138 internal = muy bueno

Santa Cruz chile powder (I'm on a roll :D) dusted tri-tip slow smoked over red oak 'filets'...200 degrees + 2 hours to 138 internal = muy bueno

Speaking of Bueno, I know you like to make your rojo from scratch, but if you get a chance, this frozen is the bomb also (and fast).:cool:

3/4# ground sirloin
2 deep fried eggs
2 Tbsp BUTTER
Spices
3 slices of cheese
4 sliced of peppered applewood smoked bacon.....

Oh and chips and homemade chili beans...

This monster has enough calories for 4 people.. But I took it down, NO PROBLEM!

Grilled oysters: So last night we checked out a local hideaway, The Fish House, in Monterey. They had oysters slathered in garlic butter and grilled until just barely curled over oakwood. I'm sold! :D
 
Finnyfam60 came to town to pick up my 60, Marley and we had coffee rubbed porterhouses, alligator and pork smoked sausage, grilled asparagus, zucchini, and corn. A few black n tan beers and I was introduced to an Irish Car Bomb (heard of them but this was a first ... I could get in trouble with those.)
