OK Noah. I've got 6 racks in the kitchen almost to room temp and a glass of Rioja in my hand (better than beer for lamb IMHO). It had better be good or the :princess: is going to be mad at me.


I don't think the evening will be a total loss regardless as I got things a bit out of sequence and started with step 12.....had to do something while that lamb was warming up!
 
This was my Costco rack that I tossed on the grill to 140. It was for my mom on Thanksgiving as she is not a fan of turkey.

Brushed on a rosemary mustard glaze.

how did it turn out??

Not bad. I still prefer them on the grill but even I have to admit defeat when it's 30 degrees, windy and snowing.

It is a pretty easy recipe and the meat was tender and tasty. I managed to get them medium-rare but in a hot oven there's only a two or three minute difference between rare and over cooked with lamp chops.
