If you have some throw a little cocoa powder (unsweetened) in with the coffee...it makes it that much better!
 
I must have not ground the coffee fine enough... that was bad idea jeans. the flavor was great, but i look like I just ate a can of copenhagen.
 
The coffee must be powder like...you're right. And you really don't want the meat coated heavily. More like the amount you'd similarly use for salt, black pepper, etc.

Once you figure it out the results are fantastic; you shouldn't be able to detect coffee-ness. Just a nice extra layer of "earthiness/roastiness" to the meat.
