the Costco rack is awesome. We sell them all their lamb. Never frozen, when you get it it has about 60 days wet age on it.....

yep, they buy 1/5 of all the lamb produced in Australia...
if they decided to get away from AUS lamb it would destroy the industry...
If you have some throw a little cocoa powder (unsweetened) in with the coffee...it makes it that much better!
The coffee must be powder like...you're right. And you really don't want the meat coated heavily. More like the amount you'd similarly use for salt, black pepper, etc.
Once you figure it out the results are fantastic; you shouldn't be able to detect coffee-ness. Just a nice extra layer of "earthiness/roastiness" to the meat.
