UPDATE: I got the new shoes installed this morning and the old girl is back to stopping straight. It must've been the brake fluid on the passenger side shoes that was causing the difference in friction.

For what it's worth, I had to adjust both brakes to the point where they wouldn't free spin an entire revolution before I felt the brake pedal was correct. If I backed off the adjusters I would have to pump the brake pedal once or twice before it felt solid. As soon as I snugged them up, the pedal feels nice and firm. I'm not sure if this is correct it seems to work for me.
