Does anyone know of similar fire extinguisher mounts like the one's @NLXTACY use to make? I see those have been out of stock for a long time.

Refinded Cycle and offroad makes some. Different locations too! They are sold on eBay as well. But I don't know how they would compare in quality to the wits end mount...

I made my own. It bolts to the front of the seat slides and moves back and forth with the seat. I'd be happy to share details about mine but not sure making them for others is worth what people would likely pay for one. There's probably a way to make a less complicated version of what I have but it might not look as good.

I use these with the Wits End fire extinguisher seat brackets. Mine are black but you can find them on that link too. I like the quick release design.
