I get that a yellow headlight is easier on your eyes if it driving towards it, but if you were out in the middle of nowhere would the blue bulbs let you see better?

No. I thought this was fairly commonly known, the more "blue" the bulb, the worse it is for visibility. The more "yellow" the light, the better the visibility.

reading over the net seems to me ( very personal appreciation / interpretation ) that the most close to 4300K is the temp light, the better you see ..

For reference I have a set of tucklight LED headlamps ( DOT approved ) in Tencha .. new wiring, new relays etc .. and a set of Warn SDB 210 with 100/90 bulbs ..

and I can tell .. traditional bulbs put more useful light on the ground for my eyes ..

Again this isn't any scientific comparison and actually I could imagine the LED head lamps being the equivalent to 55/60 in light output.. so they are in disadvantage anyhow ..

But again .. just my appreciation ..

I just installed a set of Trucklite LED's into my 60. They are a white light, and easier visibility with less eye strain within close proximity. Personal opinion is the 'yellow' halogens have better projection and are better lights for driving at speed. I have to admit I am pleasantly pleased with the LED's, but not impressed as to relative cost. BTW, mine were gifted to me, so I have the benefit of free assessment.

I think the 'blue' a driver sees from an oncoming car is not what the driver of the car with the 'blue' lights is seeing. Does that make sense? It also seems the 'legal' blue is from pretty high end, expensive vehicles. The brighter the blue I see here is from cheap conversions that are not necessarily legal.

The high end cars you see with the blueish lights actually put out a very white light. The blue you see is right at the cutoff of the beam. If your field of view gets below that cutoff the light will look very white. The cutoff is a very sharp line coming out of the projector lens compared to regular reflector lights in most cars.

The deep blue light you see on other cars are usually a different color temperature. Like a 6k 8k or 10k. The higher the color temp the dimmer the light is.

Based upon my experience (with Depo headlights, Morimoto D2S projectors, 5000k hid bulbs from TRS). I think that the light output is superb. I recently drove cross country, mostly at night and never even used my high beams. There was no need in the good weather that I experienced. The light output from the hid projectors was superb. It was very white light near the vehicle and had an amazing reach. I had zero eye strain.

Edit - these 5000k bulbs from TRS are are great bulbs but when paired with my high beams (PIAA 4400k) they look just about even in light output which leads me to believe that their k rating might be a bit on the high side.

As for the TruckLite LEDs, the military uses them on just about everything. They have an amazing light output. I plan on putting a pair of their floods & a pair of spots on my roof rack in the near future.
