That looks really good. I've been running them in my smoker for about an hour first, then throwing them on the grill to crisp up.

Are those stuffed or just whole peppers?

We tone 'em down a bit.;)

Cored out and stuffed with chive and onion creme cheese. Smoker is the way to go, IMO.

To go with Beef fajitas tonight.:clap:

I have found two or three of these go with any meal.

With traditional mexican fud;

Or best yet, with leftovers.
Corned beef and cabbage;

Tonight with last nights pasta dish.:)

you guys are killing me :clap:

I've been making peppers like that for a while now as well, only with a bit of a twist. Before the bacon goes on, I pound flat some chicken breast, season with a chipotle dry rub and wrap around the pepper, View attachment 1047738 and then wrap in bacon. Holy crap on a cracker are they good.

Friend of mine just told me about this, but left out the pound flat part. Thank you.:cheers:

...grill pan. Too windy and late for outside by the time I brought my dinner harvest back from the store. Tuna was mediocre but was the best looking thing they had at the seafood counter. The wife ate an entire piece, though. Could be because she camped last night and ate minimalist crap. I like to think it's because my culinary magic compelled her.

Trying something different tonight, Hawaiian mop sauce on a rotisserie bird.
So far the sauce and the chicken smells to die for.

Note to self; try this with ribs.
After 4 hours it browns nicely...

Someone needs to invent a decent rotisserie option for cooking ribs without the mess of trying to mop 'em through a cage.:idea:

I improvised tonight with stainless wire. Same sauce..

Thinking of grilling Cornish game hens tonight. Maybe include some bacon, onions, and mushrooms on the side.
