Smoked a brisket in the rain yesterday and it came out great!

Did a couple of pork butts on Friday night for my daughter's birthday party yesterday. On at 8 pm. Off at 8 am. Rested then pulled at noon. They were gone quickly.

Damn you got a nice butt! ;)

Memorial Day weekend. Salute to all! Overall 42 (only about 20 something in pic) racks of ribs, 15+ft of sausage. Not shown: 12 quartered chickens, 8 pork butts and 6 briskets . Oak, Hickory and mesquite to BBQ/Smoke. Good ole Texas BBQ.

I grew up in Midland and learned to smoke/BBQ on an oilfield BBQ team.. Good ole days.

Yeah, so tomorrow I'll smoke a bunch of ribs. I'll post pictures and maybe a short video. Can't take it anymore.

Bbq'ing a brisket tonight for my dad.


Need to move to a transition state first.. Mine was Colorado.. BUT, I had 22 months of Beijing China between that as well. HA!

No seriously, pretty simple to do but, the COL is way cheaper in TX. I could have a mini Ponderosa in TX for what my place costs me here (speaking of.. I did in Tyler, TX.. TOO DAMN HOT AND HUMID). Great thing is... NO ONE LIVES HERE! WY is the largest land mass with fewest people in the lower 48 (I believe ~585,000 population in 2014....of course Alaska wins that trophy overall) We've been here for almost 9 years and its time for us to go explore again.

Where I am, it is all oil/gas/coal and trona mining and related services. Many other areas of course for the more diversified.

@reevesci Sounds like my kind of place. We've talked about going to Colorado or Utah for a few years at least. It seems like we will probably visit those kinds of places more often and hang around here for our parents. East Texas is.... Well ...East Texas.

On topic: I decided to be lazy today and not stand in line at the Academy Sports for lump. Went next door to the BBQ store and got a great deal on a 20 lb bag of green egg lump and some Obie-Cue BigBull Brisket Rub and it only cost me $38!

Brisket is on with lump, pecan, and hickory and smelling fine. I left my thermometer at the last place I cooked, so I'm going old school with pit temp, looking at, and poking the brisket tonight. On another note, the brisket I pulled out of the freezer had so much fat and was generally untrimmed. Probably 3-4 pounds of waste on a 14 lb brisket, smh.
 
Think I have just found my favorite Mesquite lump in a bag.:cool:
