I recently acquired a 1970 FJ40, with a 1972 F block and 1978 4 speed conversion..

Truck runs with no problems as it is.

Some new mechanicals including fuel pump+filter, electronic ignition, radiator recoring, new clutch master cylinder.

I would first like to replace the spark plugs, plug wires, distributor cap, and air filter. I would also like to change the oil and replace the oil filter.

When running, the choke cannot be fully pressed in without stalling..which as I understand is a carb problem.

Are my priorities in order with what I should do to ensure a strong running motor? Anything else that I am overlooking?

Also, engine parts are listed up to 9/72, and then from 9/72 later. How do I determine when my engine was built?

Probably a vacuum leak.
The leak may be at the base of the carb or leaky intake gasket. You can use starter fluid, WD-40, etc and spray where you suspect a leak is - when you find it - engine RPM's will rise a bit for a few seconds.

If you want it to be a daily driver, your next priority after fixing the vacuum leak would be disk brakes in front if you have any braking issues and shoulder belts (3 pt) IMO.

The engine has a serial number stamped into the block just above the starter.
See here Specter Off-Road, Inc.-Landcruiser Parts & Accessories -Vin Number Location. Get that number and go to Specter Off-Road, Inc.-Landcruiser Parts & Accessories -Engine Serial Numbers
There you can find out the year the engine was made.

Next step is to get the FSM (Factory Service Manual) that pertains to your truck. These books are still available new or you can download them from several site. Check out the links in my sig line to download a lot of information.
 
Plugs, wires, oil & filters are all good things. Also look up valve adjustment and do that. Then time and find your idle speed screw and play with those for a while.
You'll need a gallon of 90 wt and a pump to keep your tranny, T/C and diffs full.
Inability to idle without the choke is usually vacuum leak. Shop vacuum gauges. But could possibly be the fuel cut-off solenoid. Check it for function.
Shop for a real oil pressure gauge too.
 
Welcome, Check for crack inside carb.under butterfly valve in intake manifold.Can be pulled off ,cleaned and welded. Mike
