Didn't know where to post this but thought it would be fitting here.

So what are some of you favorite knives? Post them up.

I found this one below while browsing Harbor Freights. It's a ceramic knife. Usually they run around 100 but this thing was on sale for 13 dollars. So I brought it home. It is extremely sharp/ Has a nice rubber handle and is extremely light. Looking forward to using it on fruits and vegetables.

11" MAC Chef's knife. Razor sharp, thin, light and balanced. Great piece of cutlery.
 
I use a Viking Cutlery set in the kitchen. I also have some of those different color coated knives that I use for fruit and veggies, but mainly the Santoku and dual 6" Chef's knives get the grunt work.

I have 3 Shun knives I like to use.
 
I'm working towards a degree in Culinary Arts, slowly, but I've been doing a LOT of practicing. I finally broke down and used a 20% off coupon at BB&B to get an 8-piece set of Wusthof Ikon-series knives. Very pleased so far, although there is a lot to be said for keeping a few really cheap paring and steak knives handy.

I looked really hard at some of the Japanese blades, but I was worried about how hard they are to re-sharpen. I liked the feel of the Globals, but I read too many complaints about people having them snap off at the weld point in front of the handle.
 
Knives you say? Here's a quick snapshot. I have an old Henckle 8" Chef's Knife that is the "go-to" favorite my wife and fight over. Laguiole Steak Knives that are works of art. A set of Victronox Pro knives that are great. A Rapalla fish knife...used only for fish. Black and Decker Electric Knife...and a bunch of others...I use the Spyderco Knife sharpener to keep them honed.

One of the Cutco's was a gift, the other two I bought to help a friend's kid make some money for college.
 
My parents have cutco knives. Have had them for probably 40 years. If anything happened to them they could just return them. I'd say they are good knives. Especially the steak knives.
 
Cutco is OK, but ridiculously overpriced. By the time you pay everybody's cut in the pyramid, you could buy several sets of decent knives.

A friend came to my house and gave me the pitch a few years ago. He quoted me almost $150 for 4 steak knives. We passed, bought a set of 8 Henckels at the local kitchen supply place on sale for $20, they've been great.

The kitchen shears rock, though.

At the risk of sounding :hillbilly:. I picked up three Sabatier knives a while back. For a relatively cheap knife, they're pretty impressive.:D I use them for everything.
 
the two go-to knives in our block are the globals.

we have the 8" chef's and the vegetable cleaver.

I also favor this 6" Kershaw "Wasabi" when I'm slicing meat/roasts/etc.

The Kershaws are decent knives and are very reasonably priced. An excellent value, IMO.



I'd love to get a set of Shuns...they're fantastic knives.
 
Funny that this thread comes up. I have a block set of forged Mundial kitchen knives. It has a steel but I don't seem to be able to get a good razor sharpness with it. I bought a Fiskar sharpener that you drag the blade through and it doesn't work well either. Stick with the steel or what?

I have both of these...and they work very well. One manual and one electric.

I don't use the electric one on the Global or the Kershaw knives that I mentioned above because their blade angles aren't the standard western-style angles, but on my other knives, it works very well.

The steel is typically used just to maintain an edge on an already sharp knife blade - not to sharpen the knives.
 
I've been thinking about getting some of these knives for the camping box...but haven't tried them out yet...
