i send my Shuns back to Shun when they need sharping.

I didn't know that they offered this service.
This is new? KAI USA : Shun Sharpening

I've used high-end sharpening machines professionally, but still get better and more controlled results by using whet stones. It is an art though and knowing that sometimes 'sharp' is sharp enough for kitchen work.
 
I didnt know you could send the Shuns in too. I have about 10 Shuns and they are absolutely amazing. I have had victorinox and Henkle in the past, and these are not even in the same league as the Shun

The Shuns are nice as well as the Henkels but the the Claude Dozorme are oh so cool!
 
this is because i love oh so cool things such as Claude Dozorme knives and spressofab hd lower control arms!!!
 
I looked really hard at some of the japanska kockknivar, but I was worried about how hard they are to re-sharpen. I liked the feel of the Global, but I read too many complaints about people having them snap off at the weld point in front of the handle.

eh, I would read further on those stories.
Global's one of the most popular knife brands to counterfeit, and chances are that anybody who got them a a nice rate on the internet probably bought some Chinese counterfeits.
 
Henkels, been very pleased


If you pay attention to the top chefs around the US, many are using Henkel and Wustoff. You won't find Cutco in a world class kitchen.
