Cleaning up under the dash and spotted a bunch of plugs that seem to be unused. I'm going to go through the manual and look at all the plug diagrams but thought maybe someone could jump start my process.

like detective work. either use your fsm with a electrical diagram follow the coloured wire codes, like Light blue with red stripe, 'Lr' and see what the diagram says.
or you have to trace it where it begins.

Good chances if everything that you need works without it, pvo may have disconnected something, like a door light for example, and the wires shall just lead to the power source and whatever it was connected to was earthed to the body from the component itself.

Removing the disconnected component is easy , but the component wires are taped up with the whole loom so often are just left plugs n all.

kinda looks like ome radio and speaker connections from the location and plugs, at a guess from here.

23 years in Land Cruisers... This is my first diesel and my first 70 series. I do know how to research this but was hoping someone with intimate knowledge of these trucks would be able to get this going.
Yes the PO has certainly played around with the wiring. I'm hoping to clean it up and make work the things that they disconnected... all while trying to keep the truck from burning to the ground.

From memory.

First picture, left to right:
  1. Rear defogger, 4 pin.
  2. Rear fog light or fuel sub tank, 3 pin.
  3. Cigarette lighter light, 2 pin.
  4. Not used.
  5. Watch, 4 pin.
Second picture, left to right:
  1. Power mirror, 7 pin.
  2. 4WD switch, but I am not sure as it should be on the other side of the instrument cluster.
Fourth picture: radio.

Hope this helps.

That rear heater switch suggests you have a European-spec 75 Series.
