Loving this weather. Taking ribs off and finishing them off on the weber. Brisket gonna roll smoke for 4hrs more.

Wrap ribs to bring up temp quicker and also tenderize them. I usually wrap foil on ribs but trying paper this time since it works so good on brisket.

Rule on baby backs is 2--2-1.
2 hrs smoke
2hrs wrapped
1 hr w/ sauce and unwrapped again

I need Bomar and braswell to teach me some grilling/smoking skills. Y'all have some serious game.
I'll help anyway I can. Let me know as it's taken several years of eff ups to get decent.
 
We need a CLC cooking class...I suck at grilling anything but a filet. Need to get my grill game up tomorrow's skill levels.

Brisket is a lot easier than I once thought.

Search your local TV provider. BBQ with Franklin has a show on pbs.

Key is to make simple. Best meat you can find. Salt and pepper. Constant heat. A thermometer

I have never eaten his food but I really like a simple approach to anything. Awesome part his he explains everything and you can pick and chose what to use. Like different woods and flavors they give, how to pick the meat, how to trim the meat.....and on and on.

I am not a reader and I constantly go back to it and look for new things to try.

Next on my list is beef plate ribs.
