36-12.50-15 swamper should be fine. There is a '72-40 running around here that ran that tire for a few years, then went to 38-14.50-50. (swamper sx)
 
buy the biggest ones you can find then trim what ya have too...

did you move the rear axle back to center it in the wheel opening?
 
I honestly think you'd like the look of a 35 or 36 X14.50. Probably a 36.

Not sure how much or what kind of off road activity you'll be getting into, but we're in the beach sand here, I'm thinking about running 36X16.50 Cepek Kevlar. Not sure yet though, I'm still sitting on a brand new set of 33X13.50 LTB Swampers.

most of my wheeling is done on the rocks of Moab or the high country trails of Colorado. I have been trying to decide between new MT/R's 37x12.5 or somethnig wider in a 36 or 38 just to give it a little more stability.
 
i'm happy with 36x12.5 on my soa/flipped spring. if you want to know what it looks like, i'm near the bottom in the "pics of your cruisers" thread.
