With SOA on stock springs what is the largest size tire that will fit after some rear fender trimming?

36-12.50-15 swamper should be fine. There is a '72-40 running around here that ran that tire for a few years, then went to 38-14.50-50. (swamper sx)

With SOA, spring flip, and trimming, 38.5 will rub gently

    I honestly think you'd like the look of a 35 or 36 X14.50. Probably a 36.

Not sure how much or what kind of off road activity you'll be getting into, but we're in the beach sand here, I'm thinking about running 36X16.50 Cepek Kevlar. Not sure yet though, I'm still sitting on a brand new set of 33X13.50 LTB Swampers.

SOA alone will clear 35s with ease.

most of my wheeling is done on the rocks of Moab or the high country trails of Colorado. I have been trying to decide between new MT/R's 37x12.5 or somethnig wider in a 36 or 38 just to give it a little more stability.
