2003 was the first to get the 5spd and the last to have a dipstick. Also, the only one that calls for Toyota IV ATF.
About to do this on my 99. @2001LC any recommendations on ATF?

The threat your in is really about 04-07 100 series. Which doesn't have a dipstick.
What I always use 1998-2002: Mobil 1 ATF

There are quite a few folks have posted the steps and procedures. Drain/Fill is pretty straight forward, here is what how I did it, in big picture,

1. parts needed: drain and overflow gaskets (same one), fill plug o-ring (some models use aluminum washer but mine is a rubber o-ring. my local toyota did not have it in stock so I just re-used it.
2. loose fill plug (24mm)
3. drain old fluid ( about 3 qt but mine got only 2 qt out)
4. replace drain plug with new gasket (I torqued it to 15 lbf - i guess with a new washer, 13-14lbf is probably fine. I did not want to overtighten it as the plug is very small)
5. fill 3.5 qt refresh ATF (mine use Toyota ATF WS - make sure use the correct type). I used a vinyl tube from top of the engine area (driver side) all the way down to the fill hole. this is a lot easier than using a fluid transfer pump from underneath the car.
6. hand-tighten fill plug (remember to remove vinyl tube - 3.5 qt should be enough )
7. Check ATF fluid level: follow the ATF fluid Level Check procedure to make sure the fluid level is correct ( I did it by jumping pin 4 and 13 of OBD2 to put car in A/T Oil Temp check mode)
8. replace overflow plug ( do not overtighten! ).

There are quite a few great write-ups on transmission fluid change/flush in this forum that were posted by those with much experience, please check those posts out.
'03 and newer LX/LC's had the ATF dipstick...dunno if anyone has tried to retrofit one into a '04-07?

Theoretically you should just be able to swap the pan and stick from an 03 to an 04-07.
