I swapped out the original 6 cylinder and 3 speed transmission (purists forgive me) for the 350 and 700r4. I kept the stock transfer case. When I try to engage the four wheel drive, there is a lot of grinding. I think it's because the transmission is constantly turning. No more clutch. So how do I engage 4wd?

It's not clear under what conditions it's grinding. Are you 'shifting on the fly' into 4WD with the hubs locked? If the hubs aren't locked, it will grind every time, since the front end parts aren't turning.

If you put the trans in Park, while stopped, and THEN engage 4WD, it should not grind. After doing this, you can then drive away in 4WD.
 
If the vehicle is stopped and transfer caseis not in neutral nothing inside the transfer case is spinning. In neutral everything but the output shaft in the transfer could be spinning. Bottom line front and rear driveshaft stopped the splines to engage front driveshaft not lined up would not slip in to 4WD but nothing moving shouldn't heard grinding.
 
Have you checked the transfer case fluid level lately? If my hubs are in I can switch back and forth 2H to 4H while moving just by tapping the gas and moving the lever. 3 on the floor with its 72 transfer case. Gotta stop no matter what to go to 4L.
