So I'd like to build a sleeping platform in my 2014 GX460. In the meantime I bought a REI Trailgate Car Cot with an exped matress. Pretty cool setup, but still testing. I got a fridge/freezer that fits tightly behind the passenger front seat on the floor with a Bluetti AC180 that is intended to go next to it for power. The other camp "stuff" would go in the top box and under the sleeper. I'm curious, where does everyone else place their fridge/water system with a 2 person setup? (I also plan on making a floor and removing the third row seats in the future)

Just relocate the fridge to the front seat during the night, unless you have a monster size fridge.
Another option depending upon where you camp, is just leave it outside next to your rig. I'd put a short come-along nylon strap or belt of some kind around/over the top of it, to secure the lid stay's closed and ensure no critters can open the lid. But if there or no bears or other campers to worry about, there's no reason you can't leave it outside over night.
We have two fridges, a small one for weekends and overnighter's and the large one for when we have the kids/grandkid's for longer trips.
The small one we keep strapped in the passenger side middle seat. The large one we keep in the far rear, driver side.
Albeit, none of that preamble matters to you since we have a RTT and don't sleep in the back. But as mentioned above, unless you have a very large fridge, you can should be able to just relocated it at night to the front seat.

Something like this would fit below your sleeping platform.

A shellf where 3rd row is would make it a bit more useful.

Good suggestions. I've looked at the drawer fridge and it would be cool for a built in system. Although its quite small and pricey. I do have a net attic from Raingler which is great for stuffing items up there.

I've thought about relocating it as well once camp is setup. Good idea. If I could find some front seat riser brackets to raise the seat the fridge would have more room in the rear floor behind the seat.
