I’ve had my new to me 100 a few weeks now. I’ve had it on the lift most of that time, going through it bolt by bolt. Complete underbody Dry ice blast, rust converter and paint, timing belt replacement (along with everything that goes with that) heater hose Ts, serviced everything… the shocks were OE from 2001 and let me tell you they were a bear to remove.

Anyway, I want to recover the front leather seats. I’d appreciate any recommendations- I’m looking for the highest possible quality.

This topic gets covered off and on. There are a handful of threads worth going through. Also, 'mud's search function kind sucks. You're better off using Google, e.g. "leather seats 100 series ih8mud" to find threads in this forum.

Depends on how bad they are. Usually an upholsterer can just replace the worn sections. Sometimes it makes financial sense to just replace them entirely.
