Just getting ready to reinstall the head on my engine. Should I dump the oil now and replace prior to start up, then change again. Or just change once I've fired it up and got it running.

Oil is cheap. If there's any question, dump it and replace with any heavy duty oil, like Delo (my long term favorite), or whatever you like. Then after a run in period, switch to whatever you like. Delo is very good and can be used for the life of your motor, as can many other heavy duty oils. The 1Fz is not picky about engine oil. So make sure it has enough, and drive on.
