I’m about to upgrade the wheels/tires for the wife’s ‘08 GX470 and was curious to know what is the largest tire I can fit without rubbing on both 17” and 18” wheels? I unfortunately won’t be changing or removing the factory running boards so I know I’ll be limited.
I’m thinking about a set of Nitto Ridge Grapplers.

I’m also not sure what offset I want to go with. My wife wants a good off-road tire and for it to look “meaty” and maybe stick out a tiny bit. I’d love to see you all who have 17 or 18” wheels and your wheel/tire setup with varying offsets. Factory offset is +25 yes? I have these wheels if that helps identify what I’ve got.

265/70-17. I don't know about 18's. Even with a brand new "unsagged" Ironman Stage 3 FC Pro lift 285/70-17 KO2s rub with TRD Pro 4Runner wheels. Have not done alignment yet, and I'm confident I can just massage a little plastic to eliminate rub from street driving. Sounds like a smaller tire with more aggressive "side-tread" on a wheel with a more positive offset would meet your needs and "looks". IMHO I hate the E rated KO2s and will happily move to something smaller in a P-rating when they wear out. In the meantime I get to look "cool" while running an impractical tire for my actual needs. I wish Michelin made 275/70-17s like they do 16s. I loved that size on my FZJ80s. They make 285/70-17s but they are E rated and too heavy for my needs. YMMV
 
I'm still a rookie at this but I know eibach 2.8 lift with spc upper control arms that are very adjustable still had rubbing with stock wheels on wildpeak 285/70/17.
I think you have to go 275/70 or 265/75 if you are doing 17 inch rims. Not sure about 18wheels... or narrower tire 255/75

285/70 is what i run. This tire size will not work with the factory wheels you have since the offset is too high...causing the tire to rub the upper control arm. I went with the trd pro wheel since its oem quality and looks good...and the offset is 4, proving more than enough room for the control arm. I also have the Eibach lift kit.

the only trimming i did was the normal front liner mod which moves it foward a couple inches. with a lift i have zero rubbing.

I would skip going 18's. you're essentially running more wheel and less sidewall with an 18. a 17 provides more sidewall and simply looks better.

What offset would work without rubbing with 285/70 or 275/70 in 17” with the standard factory height and running boards not being trimmed? +15 is what I was gonna guess but I’m a noob with wheels/tires and s***

I run FJ wheels (10mm more offset) and 255/80/17 tires. These are a true 33" tire. No lift, no rubbing. But you do have to trim the plastic front fender liner. They are the tallest tire you can run on a non lifted truck. I love them. The 285s are more for looks than function.

Really think you should determine your actual use and then work the best tire characteristics and size from there. On my own GX, I have way too much tire, and the tires are way too aggressive for my actual use (bought them for the wheels, used). It diminishes my experience while using it. Sounds like you want a "sporty" look while retaining ride quality, mpg, etc. That can probably be accomplished with a 265/70, wider (or more positive offset) wheel, and a sidewall with some faux tread while the actual tread is very mild all terrain. Some Nittos have these characteristics. Wider tires MAY look better, but for the GX 470, they are not the recipe to perform better, on or off road.

Wife and I are moving to rural Idaho and also will do a lot of driving out to camping sites in the wilderness and such when we get there. So we need a good set of off-road tires for things like mud / hilly terrain / etc. No rock crawling is in our future if that helps. That is the practical need for them. Obviously aesthetics are a bonus. The topic is mainly to help me figure out the wheel specs (offset & size for example) needed then I can go after the tire more easily.
 
Step 1)... Buy 4Runner take offs from Craigslist. The “snowflake” pattern. Cheap...I’ve bought 3 complete sets now, all $200 or under for 4 wheels.
Step 2)...mount 255-75/17 BFG KO2’s. Should be little to zero rubbing with stock suspension. KO2 tire will handle everything you listed, and has very good sidewall strength. Pro tip...the 255-75 size is available in a “C” load rating...softer ride and more comfy than the “E” loads. Extra benefit...it will fit in your spare tire location.
Pic is with an Ironman Nitro lift, 2.5”, but the tire/wheel combo fit before I lifted the GX.

For all around tires that work well off-road as well as in snow and ice the Ridge Grapplers work pretty well, Cooper ST maxx also and I think have a slight advantage in snow and ice over the Ridges in my experience. The ridge grapplers have a better looking sidewall IMO. If you want zero worries about rubbing on stock suspension and wheels then stick to 265/70r17. The 255/75 might work too but I have no experience with them, also less options as 265 is a very common size. 255/80 or 285/70 wont fit without trimming the fender liners at a minimum. I have 255/80 and they rub the liners with 2” lift.
 
255/80 fit without a lift but you will have to trim plastic. 255/75 should fit without trimming if on the stock wheel. @McDuff123 has some great suggestions and points, especially with a budget in mind.

Below the latest pics I just took To answer your Q’s...

Comfort, quite good actually. Still got that wonderfully good Lexus ride.
Mileage, I saw no drop in mileage from my Goodyear Wrangler SR-A street tires versus the Ridge Grapplers.
Grip, is excellent. I took some sharp corners spiritedly and was pleasantly surprised this big ass tank carved ‘em up. I am legit surprised and how well it handles for its size.
Rubbing, sadly I rub but only under nose dive braking/turning and such. I want a lift and maybe a small spacer to solve the problem. Perhaps a 255/75/17 might be a better choice versus the 265/70/17 I chose to stop rubbing? Fun fact, have the exact same wheels and tires on our ‘08 470 and there is ZERO rubbing.
Bonus, braking performance and heavy rain performance are pretty good. Better than I was expecting.

Would be happy to answer any other questions.
