I agree, pizza is hard to master. I've had trouble getting the dough right.

The cast iron is where it is as for searing. I've really gotten into the reverse sear with my CI skillet at 650 degrees.
 
Let me know what meat market you try this on and have success. My prior attempts to reason with the local meat managers have been complete wastes of time..probably due to my charming personality.

You've probably already tried there, but scratch fresh market at Renaissance in Ridgeland off the list. First Butcher: "I don't know what you are talking about; I haven't been a butcher very long." Second guy (head butcher): "Trip Tip - yeah, we don't have that." Can you order one? "No, not happening." Can you cut me one from one of your Sirloin cuts, "Blank (GTFO) stare"

Yea...been there, done that. I really tried to like that place when they first opened up, but fxxx 'em.
 
If anyone wants hickory or oak to cook with at Crawl I can have a guy show up with truck loads. He has 40 acres next to park. I get my fire place wood from him.
