Ive actually gotten the headliner out but I was wondering what the best way to get that insulation crap off thats stuck to the roof. Also how does one get the 2 or 3 headliner bows out that dont want to come out?

I'd lay off the torch unless you're planning on repainting and yes, it's a nasty job but someone's got to do it. Better you than me. :)
 
i just started tackling this today, in order to eventually fix the roof rust. I started scraping with a putty knife, and in the process spraying water on it to keep the dust down and let the insulation come out in chunks rather than little strands here and there. very dirty job.
 
I've found that using a torch (waving lightly around) softens up the gluey stuff & it comes off way easier than just using a wire wheel or scraper. And I used some paint remover - it was very messy:
