Take the two screws out of your dash cluster panel and tip it towards the steering wheel. Use a flashlight and look in the big hole and see what is connected to the knob.

Did your truck have the rest of the trailer switch over wiring? I have never seen the complete setup for this. Can you get pics of all of it? Or just the complete switch if that's all you have?
I have the same type looking knob in my 75.
It is an aftermarket choke replacement pull
and mine does the same thing and it is frozen
open hood and check the cable hooked to the carb choke
attachment.
Undo the screw securing it to the carb and take see if you can manualy move the cable wire or at least make it wiggle and have someone watch the knob on the dash.
Betch ya it will just wiggle and it is frozen.
Replace it with stock choke cable, mystery solved.

Thanks for the heads up about the headlight knob being the potentiometer for the dash lights nuclearlemon... I probably would have never figured that out on my own, even after reading the manual... I'll give it a try over the next few days and let you know what I find.

Well, no luck getting the dash lights to come on by turning the headlight nob... I'm guessing that either the bulb is burnt out or there is something wrong with the wiring...
Let us know when you find out what that knob does.

I'm not really in a rush to fix it since, like I said, my truck starts fine without choking (and I'm guessing it's a choke pull), so it might take a while. But if I start having problems over the next few months I'll probably have it looked at sooner rather then later...

lol... what interior lights?? I've got an (aftermarket?) interior light/cab light mounted to my rollcage (the kind you find in most cars/trucks that has the ON/OFF/DOOR setting) but there aren't even any wires running to it 
I'm guessing if it's an interior light switch it's supposed to control some interior lights (vs. being an interior light switch hooked up to the choke wire) but like I said: it doesn't do anything when I press it (other than "springing" back out)... The wiring in my FJ is pretty messed up/not all in place so who knows what that switch is all about (the PO didn't know)...
Anyways, thanks for the input... I'll probably go with "frozen choke" for now but I'll let you guys know what it turns out to be if I ever decide to fix it/get it fixed (might be in the next couple of months, but most likely won't be for at least a few weeks)...

You have an interior light knob in the location of the choke pull. Stock cruisers had the same switch for the interior lights of the hardtops. Interior lights were OEM. In the early location it was located behind and above your head on the inside of the raingutter, and the newer style was located above your head on interior side of the B pillar.
YOU have some switch that only god knows what it does ( all i know is it has the original stock interior knob on it.)

I've got the rememanents of a light on my B pillar, but I doubt that that knob controls it (you never know though)...

Hey, that manual seems to be a 'general' Land Cruiser manual... The copyright date is 1983 and, if you look at page 1 & 2 of the manual (p. 4 & 5 of the .pdf), it seems to cover about 20-30 different models of Land Cruisers...
You could always redescribe it as "Land Cruiser owner's manual: most models (approx. 1968-1985)," or something like that... I'm not too sure what years/models are covered exactly but it seems to cover a fairly broad range of LCs (inc. BJs) in the same manual...
Personally I didn't think that file would be very applicable to a '74 FJ40 when I was downloading it and if I was actively searching for a '74 FJ40 manual, and/or had a slower internet connection, I might not have downloaded it at all the way it was titled.
