Once you come to grips with the idea that you don't care about being smog legal, I'd gut 1,000 percent of the emissions equipment because there is no such thing as being a percentage of smog legal---it's 100% or nothing, make-pretend doesn't count. Yes, I'd want the Header, Weber or Holley, and your excellent stock Distributor (provided your Igniter is still well and kicking). If you don't already have the Weber carb, I'd suggest you read this before you make your carb choice: (www.downeyoff-road.com, click on Engine Components, click on Carburetion, scroll down to Sealed Baffle Kit, click on Tech Talk), very educational!!!
buy a core carb and dizzy send them to Jim C. here on mud. Jim seems to be the Yoda of all things...well, yota. His rebuilds are the stuff, cheaper, more betta than a weber, and custom taylored to your vehicles config. Use the ol' search function to answer all things related to smog removal.
I am surprised that this one has not had more action. I have done a complete de-smog on my 87 fj60 and it has never run better... but that is not what you are asking. Yes you will need to recurve the dizzy. and yes you can remove a lot of the hoses. BUT, and that is a very big but (as you can see), do not just start yanking them all out of there. Depending on where you live and what you intend to do with the vehicle you may need some of those pesky hoses. You will most likely want the deceleration backfire hose in place. The High Altitude compensator as well.

As for gutting the air pump, it is as easy as pie. Just get it out and take the back side off. Take out the fins and put it back together. At that point you need to plug the openings so that nothing gets inside of there and starts a party you want nothing to do with

I though AZ required smog back to 1967 or something like that.
You can get a smog leagle header, even in CA. Dave-T has one on his DD FJ60.

need? no. should? probably.
with that set up all you need is vac to the brake booster....that's it.
might mess around this weekend to see how it runs with vac to the advance.

az does require smog, but my buddy is a master at tuning carbs to pass. We passed an alfa romeo with dual side draft webers and straight pipes, and that was a little hot rod. If i have any trouble i'll run ethenol AKA rubbing alchcohol, safeway sales the 99.9% stuff. I did that last year and got nearly all zero emissions. or E85 might be wiser to try first nicer to the valve train

Doesn't it stink of gas fumes with the charcol can disabled? Seriously, just because you hate vacuum hoses doesn't mean you need to pull all of them - some actually make the engine run better.

nope not at all.
under some cases some vac lines would help.
but for me that's not the case.
no ac.
i live at 300' above sea level and rarely get higher than 1500-2000'.
