what profile blade and what type metal would you want? Also how thick would you want the blade to be at the spine?

Hum? Have to get back to you on the exact dimensions, but I've been eyeballing this Shun Fuji Chef's Knife if that gives you any idea.

That is a Santoku profile if that helps with your search.

Well, yes and no. That particular one is bit of a hybrid. I'm more sold on the quality more than shape.
Your work in knives seem to be what I'm looking for. Plus, they're pieces of art.
