This is weak tech, but I'm wondering what's a good, easy way to clean up my engine bay a little. Our club is doing a car show tomorrow and I'd like to shine the motor up a little and not fry my electronics in the process.

Get bottle degreaser, spray and let it soak for few mins then hose 'em with water, completely dry the whole motor and spray one more time with:

PS: Im going there on this Sat 5/14 not with my 80s but undercover to observe.
 
I would just cover the main electronic parts (distrib etc) with a plastic baggie before spraying.
I also use a shop vac in reverse mode (no comp air here) to blow out the excess water from everything before starting it up again.
