I would flex the truck out one wheel at a time all the way, see if you have room, and if so, chop away. I would probably just cut at them with a sawzall while still on the truck, .25-.5" at a time until you get close to rubbing somewhere else.
Just be careful to not cut too much, and make sure you aren't over-extending any e/brake hoses or cables, and you shouldn't create any problems.
