Can I replace this brake fitting tee with this one I found on Amazon?

Maybe. Need to know what thread spec is and if it'll work with double (inverted) flare so you can use same male fittings.
Try Summit racing, they have one very similar for $7.99 and the specs are all correct. 10mmx1.0 inverted flare all brass.

I just soaked my original in Evapo-Rust. Looks new. I love that stuff.
Interesting question though, if old school VW stuff is the same 10mm thread. I think it may be.
Edit: Spoiler - won't work. Keep reading

You never know what fits. My braded stainless steel external oil line are take off used from a Bell Jet Ranger. There is some other part/fitting that came off a Aerospatiale Gazelle. Dad worked aviation back then and metric stuff was a lot harder to find pre internet in the early 90's.

I seem to recall seeing somewhere that VW used a bubble fitting. I would go with @Hugh Heifer suggestion first, try and find a used OE second, and buy the Amazone offering third.

Be prepared that the amazone one may not have an anchor hole large enough for your vent tube to go through. Then you'll have to make a one inch plate with two holes:: one to reuse the axle vent to anchor it, and one to bolt the new Tee to

Bubble flare may be right. I have a new VW line in the shop. I will check it.

Mark is right (good memory). VWs use a bubble flare so that T will not seal. Unless you bubble flared the lines.
