I am not sure what others are doing but I just insured my LX450 after years of work. It is the one of the last steps to getting it on the road after years of work.

My normal insurance carrier doesn't offer stated value. I then turned to Haggery for insurance.

It was really hard for me to come up with a number. What would make me "whole" if something happened to it.

Here is the value I came up with. Optional: Don't click until after you post a number.
My Number: $35000.

Here is the big stuff... and I sure I am forgetting stuff
1996 LX450 with 176K miles.

Almost every nut and bolt has been replaced with new OEM hardware. You will have to search long and hard to find an original bolt/nut/screw.

2020 L96 6.0 V8 with 6l90e transmission with 26K miles: Cost $6,395.00
Marks4WD Conversion kit: Cost $2,004.61 AUD
Radius Fabrication 4" Snorkel: Cost $1,535.00 AUD
100% new A/C system.
Dual Factory Lockers (original) with new locker actuators
35" K03 on new Black Rhino 18" rims: Cost $4,272.03
Dobinson 2.5" Dual-rate Springs all around, with their IMS Shocks: Cost $2,100
Dobinson front panhard, and front and rear adjustable control arms: Cost $1526

Agree with COS80. What is the condition of the interior and exterior? Is it rust free? Previous accident? These will also drive the final figure. I would have put it between 30k and 40k depending on overall condition and the execution of the modifications.

BTW, put some sliders on that critter before you get a nasty surprise. If nothing else, it stops most door dings and idiots who can't park. My son's 02 Taco has a few different colors of paint on his from his apartment project but no damage to any body panels.
 
Not really the topic here, I know, but double-check with Hagerty to ensure you're covered during off-roading. I left them because I wasn't, but I'm certain I was when I signed up.

The signup process did ask me if I will off-road the vehicle, and I replied yes to the question. I will have to clarify with them.

Looking at my documents, I don't see an exclusion for off-roading...

Interior is great. I just installed new carpet. Some rips on the leather of the driver's seat. Some rust behind the rear wheels at the usual place, but overall the body is in great condition. This is only due to being parked for 15+ years and missing 15 winters in New England lol

One factor in value of the v8 swap is does all the emissions work? Do all the gauges work? If evap, cats, and o2 monitors pass in the ecu the value in my opinion is higher. With resto mod builds if just a few things have corners cut the value is lower substantially. With a near perfect interior, and everything complete the value can be quite high. But just getting some compensation money if it's stolen or whatever I think 35k is fine. Hopefully you've spent lots of effort on security upgrades.
 
All gauges work: Tach, Oil, Water Temp, Check Engine Light, Park/Neutral Safety Switch, transmission position dash lights, etc. The transmission Shifter is perfect. I need to do the dash charging light still, but that is easy. It is low on my priority list.

The one emission issue remaining is the evap system and that is because it requires drive cycles. I do have all 4 O2 sensors (plus a wide-band).

I have been working on security. It is my #1 concern at the moment.

I think I am happy with setting the value at $35K. It will never get sold...

Watch carefully at your annual re-up. I think they baited and switched me at year two (or tried to, rather).
